SOUTHERN STYLE TOFU w/ MAC & CHEESE - Our daughter's favorite tofu!  Marinated in Tamari, Nutrional Yeast and Garlic, then crusted in Cornmeal and pan-fried.  Served over our savory Mac and Cheese. Topped with Lemon Garlic Greens.

BULGOGI (GF)- Roasted Soy Curls marinated with Mirin, Tamari, Pear Juice, Garlic and Sesame Oil.  Sauteed with Asian Greens, Carrots & Scallions and served over Brown Rice.

PINEAPPLE CURRY TOFU- Cubes of Tofu simmered in a medium curry of Pineapples, Coconut Milk, Lime & Ginger with Red Bell Peppers, Spinach and Carrots.  Served over Jasmine Rice.

PUMPKIN TAGINE - Roasted Pumpkin & Kabocha Squash, Chickpeas, Black Lentils, Sweet Potatoes, Kale, & Onions simmered with Tomatoes, Cinnamon, Saffron, Coriander and Ginger.  Served over Quinoa.

AFRICAN BLACK BEAN & PLANTAIN STEW (GF) Savory Black Beans simmered with Roasted Tomatoes, Garlic, Ginger, Mild Chiles, Scallions and Basil with Sweet Fried Plantains.  Served over Millet.

PRAIRIE CASSEROLE - Comfort food at it's best!  Roasted Soy Curls, Mushrooms, Onions, Roasted Red Peppers and Green Peas baked in a Cheddar Cheese Sauce and topped with Corn Bread Crumble.
