Menu for the Week of June 18th
Eggplant Rollatini (GF)- Spinach and Garlic Ricotta wrapped with slices of Roasted Eggplant, topped with Roasted Vegetable Marinara.
Manchurian Tofu (GF)- Baked Tofu simmered in a sweet & slightly spicy sauce of Tomato, Ginger, Garlic and Green Chile with Broccoli and Kale. Served over Brown Rice.
Enchiladas Verde (GF)- Black Bean & Tempeh filled Enchiladas topped with Green Chile Sauce and Shredded Jack Cheese.
Stroganoff (GF) - Roasted Soy Curls simmered in a rich sauce of Mushrooms, Onions and Sour Cream. Served over Buttery Noodles.
Chickpea Shaksuka (GF) - A North African dish of Chickpeas simmered in Tomato Sauce seasoned with Cumin, Smoked Paprika & Chili Powder with Black Olives, Red Bell Peppers, Spinach and Onions. Served over Quinoa.
Ful Medames (GF) - Small Fava Beans simmered with Olive Oil, Garlic, Onions, Parsley, Lemon served over Millet.
Cutlets Picatta - Our Breaded Seitan & Soy Cutlets topped with a Buttery Lemon Caper Sauce with Mushrooms. Served over Whipped Potatoes.
